This recipe makes me wish for a cold snowy wet day where I can stay inside under a pile of blankets watching old movies and eating this dish. So perfectly comforting, seasonally and cheesy. Gruyere Cheesy to be precise How have I never thought of this before? Kinda shameful really. So everyone get your supplies and pray for a Sunday of craptastic weather, it could be your most satisfying Sunday ever.

Ingredients for 6 servings

1 butternut squash , about 2lb (900g), peeled and seeded

2 tbsp balsamic vinegar

1 red onion , cut into eighths

1 tbsp chopped sage

3 tbsp olive oil , plus more for serving

1/3 cup creme fraiche

1 cup shredded Gruyere

1 lb (450g) dried penne

freshly grated Parmesan, to serve

salt and freshly ground black pepper

2 garlic cloves, minced
