Salt and freshly cracked black pepper

300 g parsnips, peeled cored and sliced finely

30 g unsalted butter

20 g double cream

50 g curly kale

1 large red onion peeled and finely sliced

30 g unsalted butter + 1tbs extra butter

125 ml red wine

75 g redcurrant jelly

300 ml white chicken stock
