5 cups chicken stock or fish stock

1 scallion , thinly sliced (green onion)

1 green chili pepper , seeded and chopped

1 stalk lemongrass , stalk roughly chopped

1 lime

12 ounces shrimp , whole (raw or cooked in shell)

2 kaffir lime leaves , shredded

salt and pepper (to taste)

1 tablespoon fresh cilantro , chopped (garnish)

1 tablespoon vegetable oil
