18 Ingredients

  • 1 1/2 cups vegetable oil
  • 1 1/2 cups bleached all-purpose flour
  • 2 cups chopped yellow onions
  • 1 cup chopped green bell peppers
  • 1 cup chopped celery
  • 5 clove garlic, chopped
  • 2 1/2 qts chicken stock (you can also do ½ chicken stock, ½ shrimp stock)
  • 1/2 cup peeled, seeded and chopped tomato
  • 1 tsp fresh thyme, chopped
  • 1/4 tsp cayenne pepper
  • 2 bay leaves
  • 4 small blue crabs, top shell removed and cut in half, if available
  • 2 lbs medium shrimp, peeled and deveined
  • 2 lb andouille sausage sliced into 1/4-inch pieces and browned
  • 2 Tbsps chopped green onions or scallions (green part only)
  • 2 Tbsps chopped fresh parsley leaves
  • 6 cups cooked long grain white rice, warm
  • Louisiana File Powder
