Ingredients for 6 servings

1 1/2 cups vegetable oil

1 1/2 cups bleached all-purpose flour

2 cups chopped yellow onions

1 cup chopped green bell peppers

1 cup chopped celery

5 clove garlic, chopped

2 1/2 quarts chicken stock (you can also do ½ chicken stock, ½ shrimp stock)

1/2 cup peeled, seeded and chopped tomato

1 teaspoon fresh thyme, chopped

1/4 teaspoon cayenne pepper

2 bay leaves

4 small blue crabs, top shell removed and cut in half, if available

2 pounds medium shrimp, peeled and deveined

2 pound Andouille sausage sliced into 1/4-inch pieces and browned

2 tablespoons chopped green onions or scallions (green part only)

2 tablespoons chopped fresh parsley leaves

6 cups cooked long grain white rice, warm
