2 Tablespoons lard or vegetable oil

1 1/2 teaspoons salt, plus more to taste (if you’re using commercial broth, reduce this amount to about 1/2 teaspoon)

2 lbs. well-trimmed pork butt or shoulder cut into bite-size pieces

2 Tablespoons flour

1 cup beer or broth or water

2 cups broth or water
