2 tablespoons neutral oil, like safflower

1 teaspoon whole cumin seeds

about 1 inch piece ginger, minced (1 tablespoon)

1 onion, minced

2 serrano chilis, seeds removed, minced

1/4 teaspoon ground coriander

Pinch cinnamon

Pinch cloves

Pinch cardamom

Freshly ground black pepper

Salt

3 whole tomatoes from a 14-ounce, chopped, plus 2 tablespoons juice from the can

1/2 teaspoon sugar

1 teaspoon freshly squeezed lemon juice

1/2 cup frozen peas, defrosted

2 tablespoons half and half

1 scallion green chopped, for serving (optional)
