4 120g cod fillets

500 g of baby spinach, picked and blanched

200 g of samphire, picked and blanched

20 g of coriander cress

50 g of shiitake mushroom, sliced

3 plum tomatoes

1 kaffir lime

olive oil

1 knob of butter


2 onions, finely sliced

200 g of muscovado sugar

375 ml of white wine

2 kg of button mushrooms

3.4l of chicken stock

1 dash of fish sauce

1 dash of Kikkoman soy sauce

vegetable oil

1 bunch of coriander stalks

3 lemon grass stalks

20 g of ginger

250 g of egg white
