2 tablespoons whole-grain mustard

1/4 teaspoon freshly ground pepper

4 teaspoons extra-virgin olive oil

4 boneless, skinless chicken breasts, (1 1/4-1 1/2 pounds), trimmed and tenders removed (see Tip)

1/2 teaspoon salt

2 sweet banana peppers, or cubanelle peppers, cut into 1-inch pieces

2 small zucchini, thinly sliced

2 shallots, thinly sliced
