4 cups thinly sliced napa (Chinese) cabbage

1/2 cup peeled, grated daikon for garnish

2 nori sheets, cut into slivers for garnish

1 Tbs. chopped fresh ginger for garnish

1 tsp. wasabi, mixed with 1 tsp. water

8-oz. pkg. soba (buckwheat) noodles

Broth

8 oz. fresh shiitake mushrooms

4-inch piece kombu

6 dried shiitake mushrooms

1/4 cup thinly sliced fresh ginger

1 small onion, thinly sliced

1/4 cup shoyu or soy sauce

1/4 cup sake
