1/2 cup crumbled Feta cheese

1/2 cup chopped, pitted Kalamata olives (optional)

2 scallions, washed, trimmed and chopped

1 tablespoon olive oil

Juice of 1/2 a lemon

1/4 teaspoon salt, plus more to taste as desired

Freshly ground pepper, to taste

Chopped parsley, to taste (optional)
