Ingredients for 8 servings

1 tablespoon olive oil

1 small sweet onion, diced

1 large garlic clove, minced

½ teaspoon sea salt

¼ teaspoon red chili flakes

¼ cup white wine

16 ounces peas (fresh or frozen)

¼ cup tightly packed mint leaves, thinly sliced (plus more for garnish)

8 slices white bread (or 1 baguette, thinly sliced)
