1 tablespoon plus 1 teaspoon cornstarch

2 teaspoons vanilla extract

1 teaspoon dry pectin, or an extra 1/2 teaspoon cornstarch

1/2 teaspoon ground cinnamon

1/4 teaspoon freshly grated nutmeg

1/4 teaspoon kosher salt
