3 slender spring onions (we’re talking true spring onions, although you can substitute scallions)

1 stalk green garlic

1 leek

3 sprigs fresh parsley, leaves separated from stems

3 quarts (12 cups) cold water

1/4 cup olive oil

Salt

1/4 cup Arborio rice

3 sprigs fresh mint, leaves only

Black pepper, to taste

Extra-virgin olive oil, for drizzling
