I used fat free ricotta even though recipe said not to, as that's what I had available, they still turned out perfect!

Ingredients

1-1/2 Tablespoons fresh lemon juice

2 teaspoons cornstarch

2 cups fresh blueberries

1/4 cup sugar

2 Tablespoons water

1/4 teaspoon salt

1-1/4 cups all-purpose flour

3 Tablespoons granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1 cup part-skim ricotta cheese (do not substitute fat-free)

1 large egg

2 large egg whites

1/2 cup lemon juice

1 Tablespoon grated lemon zest

1 Tablespoon canola oil, more for brushing on the griddle/skillet
