Ingredients for 6 servings

1 cup FOR THE GLAZE ---- Guava Jelly

1/4 cup Dijon mustard

1/4 cup Orange Juice, preferably fresh

Salt and freshly ground black pepper to taste

2 tbsp FOR THE MOJO --- mild vegetable oil, such as canola

1 x small red onion, finely chopped

4 cloves Garlic, finely chopped

3 cup Orange Juice

1/2 cup fresh lime juice

1/2 x habanero chile, seeded and finely chopped

2 tbsp chopped fresh cilantro leaves

1 tsp Cumin Seeds

2 pounds FOR THE SKEWERS --- Swordfish, sliced into 1 inch cubes

1/2 x Red onion cut into large chunks

2 x Bell peppers, whatever colors you like, cut into large chunks

2 tbsp chopped cilantro and/or mint, for garnish
