Ingredients

4 cups dried black beans

1 pound salt pork

2 pounds corned beef (uncooked)

1 pound smoked lean ham hocks

1 1/2 teaspoons freshly ground pepper + pepper to taste

3 bay leaves

1 orange, washed and cut in half

2 quarts water

1 pound linguica (Portuguese sausage), kielbasa or Italian sausage

2 tablespoons vegetable oil

1 large onion, chopped

4 garlic cloves, minced

1 to 2 jalalpenos or other fresh chiles, seeded and chopped

2 tomatoes, chopped, or a 14-ounce can of diced tomatoes, drained

1/2 cup chopped parsley (optional)

Salt to taste

Garnish

4 oranges, peeled and sliced
