Ingredients for 6 servings

1 large head Romaine lettuce

1 x Navel orange, segmented

2 x ripe avocados, sliced

a handful of fresh, chopped flat leaf parsley is also nice

1 tsp Dijon mustard

3 tbsp fresh orange juice

1 small garlic clove, finely minced

2 tsp honey

3 tbsp red wine vinegar

1 x egg yolk (if you don’t want to use a raw egg, 1 tablespoon of Greek yogurt is great!)

1/2 cup olive oil

salt and coarse ground black pepper to taste
