Ingredients for 8 servings

2 eggs

720 ml of milk

1 pinch of salt

300 g of plain flour

80 ml of vegetable oil

120 ml of water

60 g of caster sugar

1 1/2 sticks of rhubarb, cut into 2 inch pieces

250 g of frozen mixed berries

1 pinch of cinnamon

250 g of low fat cream cheese

2 tbsp of icing sugar

1/2 tsp of vanilla essence

1 lemon, zest and juice
