1 tablespoon dried culinary lavender (may substitute three 5–inch fresh lavender sprigs; optional)

11 1/2 ounces 60 to 65 percent cacao chocolate, coarsely chopped or broken up

2/3 cup heavy whipping cream

1 teaspoon raspberry extract

Warm water (optional)

3/4 cup sifted unsweetened cocoa powder, preferably top-quality Dutch-process

14 ounces 60 to 65 percent cacao chocolate, coarsely chopped or broken up, plus 6 ounces in large chunks or pieces
