Butter and flour for dusting the pan

12 ounces walnuts, finely ground to yield 4 cups (see Note)

1/4 cup fresh bread crumbs

1/2 teaspoon ground cinnamon

1 teaspoon finely ground orange zest

8 large eggs, separated

1 cup + 2 teaspoons sugar


2 1/4 cups heavy cream

1 1/2 tablespoons granulated sugar

1/2 teaspoon vanilla extract

1 tablespoon brewed coffee, room temperature

1 1/4 teaspoons instant espresso coffee powder

1/3 cup ground semisweet chocolate, about 2 ounces (see Note)

Finely ground walnuts and/or walnut halves, to decorate
