1 oz. dried porcini mushrooms (optional)

About 1/3 cup hot water, if using dried mushrooms

4 Tbs. olive oil

1 yellow onion, chopped

3 Tbs. unsalted butter

1 lb. assorted fresh mushrooms, such as cremini, portobello, chanterelle, and domestic brown or white, in any combination, brushed clean, trimmed and sliced 1/4 inch thick

1 Tbs. minced garlic

1 Tbs. chopped fresh sage or thyme

Salt and freshly ground pepper, to taste

1 cup coarse cornmeal

1 tsp. salt, plus more, to taste

4 cups water

3 to 4 Tbs. unsalted butter

1/2 cup mascarpone cheese

1/2 cup shredded Parmigiano-Reggiano cheese

About 1/3 cup hot water, if using dried &mushrooms
