2 teaspoons ground cumin (two-thirds palmful)

1 teaspoon ground coriander (one-third palmful)

1/2 teaspoon ground allspice

3 tablespoons extra-virgin olive oil (EVOO), eyeball it, plus more for drizzling

4 bone-in pork loin chops, cut 1 1/2 inches thick (about 4 pounds)

4 dill pickles, chopped

1/4 cup chopped Peppadew Piquante Peppers (jarred sweet pickled peppers) or chopped jarred piquillo peppers

6 tablespoons (3/4 stick) unsalted butter, softened

1/2 cup store-bought tomatillo salsa

4 ears of corn on the cob, shucked
