1 clove of garlic, crushed

50 g banana shallots

30 g unsalted butter

100 ml dry white wine

1 L vegetable or white chicken stock

salt and pepper

1 bay leaf

200 ml double cream

200 g very small diced smoked pancetta

200 g cooked haricot beans for garnish
