Ingredients for 30 servings

3 egg whites

100 g icing sugar

100 g ground almonds

20 g caster sugar , extra (superfine)

2 egg yolks

30 g sugar

For the creme

demerara sugar , for sprinkling on top

200 ml double cream (Heavy cream in U.S.A.)

1 teaspoon vanilla extract (the original recipe says a pinch of powdered vanilla but I don't know where to get that, unless it m)
