3 scallions, white parts only, trimmed and minced

1 tablespoon dark sesame oil

1 1/2 tablespoons distilled white vinegar

1 tablespoon sugar

1 tablespoon soy sauce

1 teaspoon rice wine or dry sherry

1 teaspoon hot bean paste

1 teaspoon hot chili oil
