Ingredients for 10 servings

4 teaspoons cayenne pepper (less, if preferred)

4 teaspoons cobán pepper (or other chili powder)

1 ½ teaspoons paprika

1 teaspoon garlic powder

1 teaspoon onion powder

2 teaspoons freshly ground black pepper

1 teaspoon kosher salt

½ teaspoon ground cumin

½ teaspoon dried oregano

½ teaspoon dried thyme

Pinch celery salt

⅓ cup olive oil

1 pound medium shrimp, peeled and deveined

1 ½ pounds of chicken breasts,cut into 2-inch pieces

1 ½ pounds andouille sausage, cut into ½-inch cubes

2 cups chopped onion

1 cup chopped celery

1 cup chopped bell pepper

2 tablespoons minced garlic

3 bay leaves

¼ teaspoon cayenne pepper

1 ½ tablespoons chopped thyme leaves (fresh)

1 cup of chopped tomatoes

1 cup tomato sauce

9 cups chicken stock

3 cups brown rice

Salt and pepper

1 cup chopped green onions

½ cup chopped parsley
