90 ml of water, warm

500 g of unsalted butter, softened

2 tsp of stem ginger

20 g of Cornish sea salt

2 tsp of ground cinnamon

30 g of dried cranberries

30 g of dried figs, chopped

30 g of golden sultanas

plain flour for dusting

200 ml of full-fat milk

120 g of liquid glucose

100 g of caster sugar

300 g of natural yoghurt

100 g of caster sugar

120 ml of water

60 g of 70% cocoa powder

2 figs

icing sugar for dusting
