8 fresh lime leaves

1-2 tablespoon fresh coriander , chopped

1 teaspoon chopped lime zest

750 g boneless chicken

1/2 teaspoon ground black peppercorns

2 shallots , peeled and finely chopped

2 inches ginger , peeled and chopped

4 stalks lemongrass

3 cloves garlic , peeled and crushed

3 tablespoons olive oil

For the curry paste

6 medium hot green chili peppers , seeded and chopped

1 teaspoon ground cumin

fresh ground black pepper

4 tablespoons chopped coriander

1 tablespoon lime juice

1 teaspoon ground coriander
