Bacon & Onion Gnocchi

4 small potatoes

Salt & pepper

1 egg

1/4 tsp. onion powder

1/8 tsp. garlic powder

1/4 cup flour, sifted

2 slices bacon, diced

1 tsp butter

1/2 onion sliced



Preheat oven to 350 F. Bake potatoes skin on till tender. About 1 hr. Let cool slightly. Skin and mash potato with seasonings.(Save skin for potato skins) Let cool more.(You can also boil but make sure poatotes are dry once drained) Beat egg till frothy. Mix gently into potato a tsp. at a time with a tbsp. of flour. You want a consistency of a light soft dough that is just past the sticky stage. In large pot boil salted water on high. On a floured surface roll dough when cool enough to handle into two 1/2" ropes. Cut into 1" sections and roll onto fork tines to create grooves on one side of each Gnocchi piece. Reduce water heat to med. high. Gently boil Gnocchi until they float. Strain immediately and place on towel to remove any excess moisture. While they cool slightly prepare mixture on bacon & onions. In large fyrpan fry bacon till it starts to crisp. Add butter ond onions. saute till onions & butter are slightly browned. Toss in Gnocchi. Let cook about 3 minutes tossing gently to coat. Serve at once.
