Ingredients for 4 servings


3 tablespoons extra-virgin olive oil (EVOO), 3 turns of the pan

1 1/2 pounds skinless, boneless chicken breasts or chicken tenders, cut into bite-size pieces

2 tablespoons chopped fresh thyme

2 teaspoons lemon zest (from 2 lemons)

1 teaspoon crushed red pepper flakes

3 - 4 garlic cloves, finely chopped

1 Cubanelle pepper (mild, long light green pepper), seeded and thinly sliced

1 small red bell pepper, thinly sliced

1 large sweet onion, quartered and thinly sliced

Freshly ground black pepper

1/2 cup dry white wine (eyeball it)

1/2 cup chicken broth

1 28 ouncecan crushed tomatoes

Grated Parmigiano-Reggiano cheese, for tossing, and to pass around the table
