Ingredients for 4 servings

1/4 cup fresh lemon juice

Zest of 1 lemon

3 tablespoons olive oil

3 tablespoons coconut aminos

2 tablespoons minced basil

1 tablespoon Dijon mustard

1 tablespoon honey

1/2 teaspoon turmeric

1 package (14 ounces) extra-firm tofu, cubed

2 tablespoons olive oil

1 leek, white part and top 3 inches removed, thinly sliced

2 cloves garlic, minced

1/2 teaspoon sea salt

6 to 8 artichoke hearts, quartered

1 carrot, julienned

8 cremini mushrooms, sliced

1 medium tomato, diced

1 cup roughly chopped spinach

Toast, tortilla, or pita (optional)
