  • 1 lb smoked haddock or finnan haddie, smoked salmon, or cooked fresh salmon or a combination
  • 2 cups milk (if using haddock or finnan haddie)
  • 3 cups cooked rice
  • 1 tsp curry powder
  • 1 tsp cayenne
  • Salt and pepper
  • 3 Tbsps butter
  • 1 onion, minced
  • 2 hard-cooked eggs, chopped
  • 1 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh chives
