1 tablespoon reduced-sodium soy sauce

3/4 pound ground chicken thigh meat

4 tablespoons oyster sauce

1 tablespoon Shaoxing rice wine or dry sherry

2 teaspoons sugar

1/2 cup chicken stock or water

3/4 cup frozen peas

1 tablespoon peanut oil

1 garlic clove, crushed

2 quarter-sized slices of fresh ginger, bruised

1/2 cup finely chopped scallions (about 3 small), divided

Freshly ground pepper

Fresh cilantro for garnish
