Ingredients for 2 servings

2 teaspoons finely grated lemon zest

3 tablespoons olive oil

1 (400 g) can chopped tomatoes

500-600 g butternut squash , peeled and cubed (about 1/2 squash)

1 cup dry red wine

1 onion , coarsely chopped

1 slice orange zest (optional)

salt & freshly ground black pepper

2 carrots , coarsely chopped

3 celery ribs , coarsely chopped

3/4 cup cooked cannellini beans (optional)

8 garlic cloves (6 unpeeled, 2 minced)

2 tablespoons chopped parsley

3 cups chicken stock

2 (1 lb) lamb shanks
