Ingredients for 4 servings

6 sprigs fresh mint

1 vanilla bean or 2 teaspoons pure vanilla extract

1/2 cup sugar

1 cup fresh berries , gently washed, drained, and sweetened to taste**

1 (1 ounce) envelope unflavored gelatin (approx. 2 teaspoons)

1 tablespoon sugar

1 teaspoon balsamic vinegar

3/4 cup fresh orange juice

3 tablespoons balsamic vinegar

strawberries and balsamic vinegar

1 cup sugar

cranberry-orange sauce

2 (1 pint) baskets strawberries , hulled, thinly sliced

1/4 cup cranberries (fresh or unthawed frozen)

Topping Variations

blueberry sauce

1 cup water

1 1/2 tablespoons sugar

1 tablespoon vanilla extract

2 1/2 cups fresh blueberries

1/2 teaspoon fresh ground black pepper
