2 pounds squid, cleaned

2 cloves garlic

1 small fresh red chile, such as a red jalapeno or Thai bird chile, sliced

-- Kosher or sea salt

1/4 cup fresh lime juice

3 tablespoons Thai fish sauce

2 teaspoons sugar

1/2 Armenian or English (hothouse) cucumber, halved lengthwise, seeded and thinly sliced

1/2 red onion, preferably torpedo onion, very thinly sliced

2 large shallots, very thinly sliced

1 tablespoon finely minced fresh lemongrass

12 to 20 mint leaves, torn in half if large

2 dozen Asian basil leaves, torn in half if large

1/2 cup whole cilantro leaves
