2 shallots, halved and sliced paper thin

2 to 3 tbsp red wine vinegar

1 1/2 pounds sweet 100s tomatoes, halved (can use grape or other cherry tomatoes)

6 tbsp blood orange-infused extra virgin olive oil* (or your favorite good-quality extra virgin olive oil)

1 garlic clove, sliced paper thin

1 1/2 pounds ripe peaches, cut into sixths

3/4 pound herbed country bread, into 1-inch slices

1 handful fresh basil leaves
