Ingredients for 4 servings

1 tablespoon olive oil

1/4 yellow onion, diced

1 garlic clove, minced

1 1/2 cup vegetable broth

1/2 tablespoon tomato paste

1 cup white, long-grain rice

1/2 teaspoon salt

1/2 teaspoon ground cumin

1 lb of tomatillos, husked and halved (about 4-5 tomatoes)

1 jalapeño, de-seeded and chopped (If you’re adverse to heat, use half a jalapeño)

1 garlic clove, chopped

1 teaspoon lime juice

Salt to taste

1/2 lb oyster mushrooms

1 lb cremini mushrooms, thinly sliced

1 teaspoon ground cumin

1 teaspoon salt

9 Tortillas (about 3 per person)

1/2 cup cotija cheese, crumbled (optional)

1 Handful cilantro (optional)
