Ingredients for 4 servings

1 tbsp Coriander Seeds

1 1/2 tsp whole Cumin Seeds

2 tbsp Coconut Oil, clarified butter or olive oil

4 x Shallots, thinly sliced

4 medium Garlic Cloves, finely chopped

4 small Serrano chile Peppers, thinly sliced

3 x Lemongrass stalks, minced

1 1/2 inch piece of Ginger, peeled & grated

8 x Green Onion, trimmed, thinly sliced

1/8 tsp Turmeric powder

1/4 cup freshly sqeezed Lime Juice and a bit of zest

6-7 cup good tasting Vegetable Broth

12 oz Tofu, cut into tiny cubes

2 x kernels from ears of corn

4 handfuls torn Spinach, stem trimmed

a small handful of each fresh Mint, fresh cilantro, fresh basil, all chopped
