3/4 oz. dried porcini mushrooms

1 cup hot water

5 1/2 cups chicken or vegetable stock

2 Tbs. unsalted butter

2 Tbs. olive oil

2 yellow onions, quartered lengthwise and sliced crosswise

2 cups Arborio or medium-grain rice

3/4 cup dry white wine

1 Tbs. finely chopped fresh sage or 1 tsp. dried

1 1/2 cups freshly grated Parmigiano-Reggiano cheese

Salt and freshly ground pepper, to taste

Fresh sage leaves for garnish
