4 Thai lime leaves, (see Tip) or 3 2-inch strips lime zest

1 stalk lemongrass, cut into 1-inch pieces (see Tip)

2 jalapeƱos, sliced

1 cup sliced shiitake mushroom caps

6 cups reduced-sodium chicken broth

1 teaspoon sugar

1/4 cup fresh lime juice

1/3 cup chopped fresh cilantro

2 scallions, sliced

1/2 medium red bell pepper, cut into 1-inch cubes

2 1/4-inch-thick slices galangal, (see Tip) or ginger

2 tablespoons fish sauce, (see Tip)

1 medium tomato, chopped

8 ounces peeled and deveined raw shrimp, (26-30 per pound)

1 1/2 cups chopped fresh pineapple
