Ingredients for 4 servings

2 tbsp dried unsweetened coconut

3 tbsp vegetable oil

1/3 cup raw cashew halves

1 medium onion, chopped

2 cloves garlic, minced

1 1inch piece fresh ginger, peeled and minced

2 x hot green chilies, minced

1 tsp brown mustard seeds

1/2 tsp ground cumin

5 x curry leaves

1 x medium carrot, chopped

1/2 cup frozen peas

2 x medium tomatoes, chopped

salt, to taste

2 cup leftover cooked grain of your choice

250 ml uncooked, boiled in plenty of salted water until chewy-soft

arge handful fresh cilantro/coriander, chopped

lemon juice, to taste
