Ginger tofu:

2 tablespoons soy sauce

1/4 cup water

2 tablespoons oyster sauce (see Note)

2 inch piece ginger, peeled and grated

2 large cloves garlic, minced

14 ounces firm tofu, cut into 1-inch cubes

Noodles and vegetables:

12 ounces fresh Asian-style noodles

2 tablespoons vegetable oil or more as needed

1/2 red onion, thinly sliced

1 carrot, julienned

1 bunch broccolini, trimmed and halved lengthwise
