2 medium beets (about 12 oz.), trimmed

1 1-lb. piece beef chuck roast

1 3-lb. piece beef bottom round

5 sprigs flat-leaf parsley, plus some chopped

for garnish

3 carrots (2 roughly chopped, 1 grated)

2 large onions, roughly chopped

2 large green bell peppers, stemmed, seeded,

and cut into a medium dice

1 large leek, cut into a medium dice

Kosher salt and freshly ground black pepper,

to taste

2 slices smoked bacon, chopped

2 cups shredded green cabbage

2 large russet potatoes, peeled and

cut into 1/2" cubes

1 granny smith apple, peeled and

2 tbsp. sugar

2 tbsp. apple cider vinegar

4 cloves garlic, finely chopped
