I made this tonight but made a few alterations. First I made garlic and basil chicken then added it to the sun-dried tomato mix. I served it with the rigatoni and a glass of red wine and Asigo cheese loaf bread as A complementary side. Also served a mixed green salad. Outstanding.

Ingredients for 8 servings

1 jar Sundried Tomatoes (7 Oz.)

4 cloves Garlic

3 tbsp Red Wine Vinegar

1 cup Extra Virgin Olive Oil

Salt And Pepper, to taste

16 ounces weight Corkscrew Pasta

1 jar Kalamata Or Assorted Olives

1 pint Ripe Cherry Tomatoes (cut In Halves)

10 x leaves Basil (10-15 Leaves), Chopped Or Julienne

1 1/2 cup Parmesan Cheese, Freshly Grated
