2.0 large eggs

50.0 ml dark rum

75.0 ml fresh orange juice

100.0 ml dessert wine

2.0 tsp treacle

75.0 g self-raising flour

100.0 g suet, regular or vegetarian

100.0 g fresh white breadcrumbs

1.0 tsp ground cinnamon

1.0 tsp ground allspice

200.0 g dark brown soft sugar

1.0 medium dessert apple, cored and grated (with skin)

150.0 g raisins

150.0 g currants

50.0 g flaked almonds

125.0 g sultanas

50.0 g candied orange and lemon, peel finely chopped

1.0 medium carrot, peeled and grated

Soft butter, for greasing

Icing sugar, redcurrants and a sprig of rosemary, to decorate

175.0 g soft unsalted butter

175.0 g icing sugar, sieved

3.0 tbsp brandy
