Ingredients for 6 servings

2 tbsp FOR THE CHILI --- Extra Virgin Olive Oil

3 pounds Ground Pork, from the shoulder

Kosher salt and freshly ground black pepper, to taste

1 x large white onion, chopped

4 cloves Garlic, Minced

1 tbsp ancho chile powder

1 tbsp Worcestershire Sauce

1 tbsp green Tabasco sauce

1 tbsp fresh thyme

3 cup low sodium beef stock

6 x Canned Tomatoes, chopped, I used fire roasted

1 tbsp Tomato Paste

2 cans black beans, drained and rinsed off

1 tbsp FOR THE POACHED EGG --- White Vinegar

1 x Egg per person

1/2 pound TO GARNISH --- crumbled Roquefort cheese

3 x scallions, thinly sliced on the bias
