25 g salted butter

2 large spring onions, trimmed and chopped

2 cloves garlic, peeled and finely diced

½ bag of baby spinach leaves, about 125g

4 British Lion eggs, beaten with a little water, about 1 tablespoon

Salt and pepper, to taste

1 large tomato, thinly sliced

50 g extra mature Cheddar cheese, coarsely grated or crumbled

½ teaspoon dried oregano or pizza herbs
