1/2 cauliflower, stalk removed

1/2 lemon, juiced

2 Tbsp olive oil

3 spring onions, finely sliced

1 big handful of parsley and mint, finely chopped

1/2 red pepper, finely diced

1/2 cucumber, finely diced

1 tomato, finely diced

pinch of salt and pepper
