can adjust for desired consistency / for a twist I've added in some grated parmesan or cheddar cheese

Ingredients for 6 servings

3 lbs russet baking potatoes

3 cloves minced garlic

finely slice the lower third of 4  scallions

3/4 cup milk

2 tbsps olive oil

1/3 stick butter

1/2 cup sour cream

to taste salt & pepper

Preparation

1.

in a large pot boil the potatoes (skins on) until cooked

2.

in a separate pan cook the garlic and scallions in the olive oil (do not overcook)

3.

when the potatoes are done drain the water and turn off the heat, return the pot to the burner

4.

smash the potatoes mixing well

5.

mix in the olive oil, garlic and scallions

6.

mix in the remaining ingredients and serve
